The monster of all Monster Cookies

Today, a family-sized recipe for a treat UND Dining Services bakes by the thousands

Yep, we said it was a giant cookie: At least we winnowed down the recipe so you don’t have to do the math to break down a 10-dozen batch. This recipe will make about three dozen large Monster Cookies. Photo by Janelle Vonasek/UND Today.

Ingredients (provided in both standard and weight measurements):

Margarine or butter 2.5 sticks (10 ounces)
Brown sugar 2 1/3 cups (1 pound, 2.75 ounces)
White sugar 2 1/3 cups (1 pound, 2.75 ounces)
Corn syrup 2 tablespoons (1.5 ounces)
Baking soda 1 tablespoon, 2 teaspoons (1 ounce)
Creamy peanut butter 2 1/2 cups (1 pound, 9 ounces)
5 large eggs (9.5 ounces)
Old-fashioned oatmeal/not steel-cut 9 cups (2 pounds, 1 ounce)
Chocolate chips 1 1/2 cups (10 ounces)
M&M’s 1 1/4 cups (10 ounces)

Directions: Preheat oven to 350 degrees. In a large mixing bowl, cream together margarine (or butter), peanut butter, brown and white sugar, baking soda and corn syrup. Begin mixing on low until the ingredients are all incorporated. Then, cream ingredients on a higher speed until the mixture is smooth, light and fluffy. This usually takes three to five minutes.

Turn off the mixer and scrape the bowl. Then, add and mix in the eggs one at a time. After all the eggs are incorporated, turn up the mixer and cream again until light and fluffy.

Turn mixer to low speed while adding oatmeal a little at a time. Once combined, add the chocolate chips and M&M’s and mix.

Scoop the cookie dough into desired size, form balls and place them on a baking sheet. Press down the cookies and bake for eight to 12 minutes, or until the tops are lightly golden-brown. Note: If the mixture feels too stiff, add another egg.

Yields: About three dozen cookies.
Calories: 489 per monster-sized cookie.
