University Catering takes the cake

Menu wins 2023 Loyal E. Horton Bronze Dining Award

When it comes to creativity in design and style, food variety and overall service options, University Catering really takes the cake.

And in the case of its full-color, mouth-watering Catering Menu, the frosting on top is the 2023 Loyal E. Horton Bronze Dining Award from the National Association of College & University Food Services.

“It’s always a good feeling when we win one of the Loyal E. Horton dining awards,” said Orlynn Rosaasen, director of UND Dining Services. “It validates our program and what we’re doing. It’s an indication that our peers also recognize our dedication to our work.”

UND seems to be in pretty good company, too. Among the other winners in six categories are Yale, Cornell, Tufts and Duke universities.

Rosaasen says many factors go into developing a great catering menu, and that’s easy to see when one browses 40 pages of delicious choices — perfect for everything from fancy sit-down dinners to build-your-own buffets and on-the-go bagged lunches. There are baked goods, hot and cold hors d’oeuvres, fruit, veggie and sandwich trays, pizza and lavosh. Let’s just say, you won’t go away hungry.

“The judges look for the completeness of the menu. They want to see pictures and different choices for all parts of the day,” Rosaasen explained. “They’re looking for nutritionally balanced offerings, and they also consider the menu’s ease of access and simplicity in ordering.”

Menu coverThe University Catering team hustles as late as 10 p.m. seven days a week to serve all sorts and sizes of events across campus. They even offer mocktail bars, picnic cookouts and tent and grill rentals.

“The catering team does an excellent job,” Rosaasen said. “There are a lot of small details that go into executing a successful catering event. The catering team takes care of the details. They take pride in what they do and want to ensure the guests’ needs are met.”
